I have heard many people doing CA + CS or CA + ACCA but I have never heard people doing CMA + CS ? Why is it so ? Also please tell me if you know about any exemptions if we CS Level 1 and 2, will we get any exemption in CA foundation or Intermediate ?

(1) It is based on the scope and opportunities that you get. (2) CMA Inter or CS Executive level pass candidates can register for CA Inter examination under direct entry scheme.
Can you tell me Why are some students doing CS + LLB for pursuing a career in Tax specialization ? Is this a good alternative for career ?

Yes, CS + LLB is good for specialization in Law. But, I don't think it is for specialization in Tax.

By Law you mean Financial matters related Law or in general Law ? For Tax, other than CA, which course can be followed for someone who wants to create a career in Tax consultation without Audit and Accounting which are the primary jobs of a CA ?

CA covers about 70-80% of CMA syllabus and about 50% of CS Syllabus. So you see those pursuing CA also pursuing CMA and CS. Also the examinations are easier as compared CA.
Sir I wanted to know which course to be specifically followed for being a Tax Consultant ? Is CA the right course for creating a career in Tax Consultancy ?
