Sales - Goods sold cash /credit and removing and dispatch to customer.
Sales order - just received the order for sale. Not dispatched to customer. And it's related to inventory record.. No consideration is involved.

Sales is meant for accounting the transactions that involved transferring the goods or services to the customer.
Sales order is just like a quotation received it's for inventory record. Mearly like administrative purpose not for accounting it.
